Ingredients

  • 4 basa fillets
  • 1 red onion, sliced
  • 3 cloves garlic, crushed
  • 2 tins cherry tomatoes
  • 1 red capcicum, sliced
  • 100g kalamata olives, halved
  • 5g fresh pasley or basil, chopped

Directions

  1. Preheat oven to 180°C
  2. In an oven proof fry pan or skillet, heat 2 tbs of vegetable oil and saute onion and garlic until translucent
  3. Add the tomatoes and capcicum and reduce heat. Gring to a low simmer for 3-5 mins, stirring occasionally
  4. Season the basa fillets with salt & peper and lay on top of the sauce
  5. Cover the pan with aluminium foil and cook in oven for 12 mins
  6. Remove the pan from the oven. Stir in half the olives and return to the oven, without the foil, for another 10 mins, until the fish is cooked
  7. Remove from the oven and sprinkle the remaining olives and herbs over dish
  8. Serve with Cous Cous or rice
