Ingredients

  • 1/4 cup (25g) almond meal
  • 1/4 cup (25g) cocoa powder
  • 1/4 tsp salt
  • 100g dark chocolate
  • 30g butter
  • 1/2 cup (100g) sugar
  • 3/4 cup (200g) greek yoghurt
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup frozen raspberries

Directions

  1. Heat the oven to 180°C (160°C fan). Line 20 x 20 cm square pan.
  2. In a small bowl, mix together almond meal, cocoa pwoder and salt.
  3. In a medium bowl, melt chocolate and butter together in the microwave. Heat together for 30s, stir and repeat until fully melted and combined.
  4. Mix in sugar, yoghurt and vanilla.
  5. Mix in eggs, one at a time, mixing well until smooth.
  6. Add dry ingredients and mix until combined.
  7. Por mixture into pan and scatter the raspberries around the top. Use an offset spatula to gently press in and smooth the top.
  8. Bake for 25 minutes or until a skewer inserted comes out clean.
