Zucchini Cottage Cheese Fritters

Ingredients
- 2 cups (~300g) grated zucchini, liquids squeezed out
- 1 cup cottage cheese, drained
- 2 eggs
- 1/4 cup breadcrumbs (or almond flour)
- 1/3 cup grated pecorino cheese
- 2 scallions, fine chop
- 1 tsp Italian herb blend
- salt and pepper to taste
- Optional Tzatziki dip
Directions
- In a large bowl, combine the squeezed out zucchini shreds, drained cottage cheese, eggs, breadcrumbs, grated cheese, scallions, italian herb blend, salt and pepper to taste. Form about 9 medium sized patties.
- Heat a large skillet with 1 - 2 tbs olive oil. Once hot, add in the patties cook until golden brown, GENTLY flipping halfway through - about 4 minutes per side.
- Optional: squeeze on some fresh lemon juice!
