Ingredients
- 4 basa fillets
- 1 red onion, sliced
- 3 cloves garlic, crushed
- 2 tins cherry tomatoes
- 1 red capcicum, sliced
- 100g kalamata olives, halved
- 5g fresh pasley or basil, chopped
Directions
- Preheat oven to 180°C
- In an oven proof fry pan or skillet, heat 2 tbs of vegetable oil and saute onion and garlic until translucent
- Add the tomatoes and capcicum and reduce heat. Gring to a low simmer for 3-5 mins, stirring occasionally
- Season the basa fillets with salt & peper and lay on top of the sauce
- Cover the pan with aluminium foil and cook in oven for 12 mins
- Remove the pan from the oven. Stir in half the olives and return to the oven, without the foil, for another 10 mins, until the fish is cooked
- Remove from the oven and sprinkle the remaining olives and herbs over dish
- Serve with Cous Cous or rice
