Ingredients
- 1/4 cup (25g) almond meal
- 1/4 cup (25g) cocoa powder
- 1/4 tsp salt
- 100g dark chocolate
- 30g butter
- 1/2 cup (100g) sugar
- 3/4 cup (200g) greek yoghurt
- 1 tsp vanilla
- 2 eggs
- 1/2 cup frozen raspberries
Directions
- Heat the oven to 180°C (160°C fan). Line 20 x 20 cm square pan.
- In a small bowl, mix together almond meal, cocoa pwoder and salt.
- In a medium bowl, melt chocolate and butter together in the microwave. Heat together for 30s, stir and repeat until fully melted and combined.
- Mix in sugar, yoghurt and vanilla.
- Mix in eggs, one at a time, mixing well until smooth.
- Add dry ingredients and mix until combined.
- Por mixture into pan and scatter the raspberries around the top. Use an offset spatula to gently press in and smooth the top.
- Bake for 25 minutes or until a skewer inserted comes out clean.
