Ingredients

  • 1 tablespoon caster sugar
  • 3 cups (450g) self-raising flour
  • 80g butter, cubed
  • 1 cup to 1 1/4 cups warm milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 200°C. Place a baking tray in the oven.
  2. Sift flour into a large bowl. Add butter; use fingertips to rub in butter.
  3. Make a well in centre of flour mixture; add 1 cup milk and the vanilla. Mix with a knife until mixture forms a soft, sticky dough, adding more milk if needed.
  4. Turn dough onto a lightly floured surface. Knead gently!! Roll out until 2cm thick. Cut scones with cutter.
  5. Place scones on warmed baking tray lined with baking paper; brush tops with milk. Bake for 12-15 minutes or until golden and well risen.
